My Favorite Salad Sauce

I did promise some recipes, and have been quite lax.  However, I am about to divulge my A#1 Favorite Salad Dressing recipe.  Ever.  Seriously, this is pretty much all I have used for a very long time.  I even carry a small container of it with me into restaurants.  I don’t like added sugar, soybean or vegetable oils tainting my gorgeous greens.  Bringing my own supply of yummy goodness helps me in that endeavor.  I have taken a couple of my favorite recipes and combined them to find MY perfect salad sauce.  Enjoy!

My very yummiest salad sauce

1/2 cup white balsamic vinegar

1 cup Extra Virgin Olive Oil

1 clove of garlic, minced or pressed

1 tbsp Horseradish Mustard

1-2 tsp dried mixed Italian herbs (Greek mixed herbs work well, too, but I am partial to Italian)

Mix together very well and serve on salad.  Good olive oil will solidify when refrigerated, so remove the dressing from the refrigerator 10-15 minutes before you intend to use it.  I am very, VERY partial to Kasandrinos Imported Olive Oil.

(Today for dinner, I drizzled this yumminess on a salad made with greens picked from my garden, organic grape tomatoes, diced organic red onion, about 2 tbsp feta cheese and 1/2 cup flaked smoked lake trout.  It was outstanding.  I almost felt virtuous!)
